Eggplant, also known as aubergine or brinjal, is used in traditional medicine throughout the world as it’s nutrient rich with minerals and antioxidants. In Australia, the eggplant is grown predominately in Queensland. The glossy purple, teardrop-shaped fruit is ideal with our native bush ingredients Davidson plum, old man saltbush, anise myrtle, bush sambal and Tasmanian mountain pepper.
