Restaurateur Simon Gloftis is pioneering Brisbane’s burgeoning dining scene, leading with his esteemed Greek restaurant Hellenika at The Calile. Simon’s recipe for octopus, or Htapodi, is representative of his approach to Hellenika’s menu: championing authentic Greek food with modern day finesse. The bright pops of Cerulean blue in the design evoke the colours of the Mediterranean Sea.
